Recipe: Pumpkin Squares


I love everything pumpkin and this is the easiest recipe I have come across. Being a family favourite, the measures are American. An autumn staple in my house!


For the Squares:

·      2 eggs

·      1 cup of sugar

·      1 cup of canned pumpkin purée

·      1 cup of vegetable oil

·      1 cup of all-purpose flour

·      ½ teaspoon of salt

·      ½ teaspoon of baking soda

·      1 ½ teaspoons of baking powder

·      1 ½ teaspoons of cinnamon


For the Cream Cheese Frosting:

·      3 ounces of softened cream cheese

·      1 tablespoon of heavy cream

·      1/3 cup of butter or margarine

·      1 teaspoon of vanilla extract

·      ½ to ¾ of a box of icing sugar (to taste)


Beat eggs sugar, pumpkin and vegetable with an electric whisk. Mix dry ingredients and add to the others. Bake in a non-stick ungreased medium size tray at 350 degrees Fahrenheit for 30 minutes. For frosting: mix all of the ingredients and spread on cooled pumpkin bars.
